Bake-aholic

I love baking.

I love muffins, cookies, brownies, and the like.

However, I don't so much like to fill my kids with junk 24/7, so when I found this amazing carrot muffin recipe, I knew that I had to have it.


Let me just tell you...they are out-of-control-good. 

Abbie doesn't care for cream cheese icing (I know, I don't know what is wrong with her either...) and Jaxon will only lick it off and discard the muffin, so Abbie iced a couple for me and we left the rest plain. To each his/her own I suppose.

 Obviously, my favorite thing about this recipe is that it is made with whole wheat flour, omega-3 eggs, and pureed carrots. My kids still haven't figured out that there are carrots in these muffins, and couldn't figure out why on earth I would put grated carrots on top of the one that I took a picture of. Shhhh...don't tell them. They might stop eating them.

Since it was 99 degrees out today, I figured I might as well make the most of my oven already being heated and make something else. I found this yummy oatmeal breakfast cake recipe and whipped it up quickly before the oven cooled off (which wasn't likely in this crazy Texas heat) I didn't think much about it when I saw it, and you won't either, but don't let the picture fool you, it is  f a n t a s t i c .


Don't judge it till you try it!

 My kids are just as tired of eating cereal on school mornings as I am of buying it, so hopefully tomorrow's morning meal will be a nice change of pace and maybe (gasp) Jaxon will actually eat his breakfast instead of decorating the floor with it. That would be a nice change.
